Quick Cucumber Sandwich

More often than not professional work leaves me with little time for elaborate cooking. Nonetheless, a good breakfast keeps me going through a hectic day comfortably. Hence, I always look out for ways of making sumptuous breakfast in a fast and easy manner! Is it too much to ask for? Not really. There are ways of preparing breakfast in a jiffy. Here’s a sandwich that you can make in no time. This recipe is ideal for those of you who are staying away from home, as well as for anyone looking forward to a relaxed morning on a holiday!

Mustard sauce – 1 teaspoon
Cucumber slices – 5-9 numbers (depending on the size)
Onion – sliced, 1 teaspoon
Salted butter – 1 teaspoon
Cheese spread – 1 teaspoon
Salt – to taste
Pepper powder – to taste

Method: Spread butter on one bread slice and cheese spread on the other slice (Fig.1).

Fig.1: Spread butter and cheese on the bread slices
Arrange cucumber slices on the buttered side. Spread onion pieces on top (Fig.2).

Fig.2: Place vegetable slices on the bread
Sprinkle salt and pepper powder on the vegetables. Top it with mustard sauce (Fig.3).

Fig.3: Top it with salt, pepper powder and mustard sauce
Place the other bread slice on top the first one, with the cheese side touching the vegetables (Fig.4).
Fig.4:Place the other bread slice on top
You can use an electric sandwich or chapatti maker to toast the sandwich. Place the sandwich in the preheated sandwich maker for approximately 30 seconds or till it becomes golden brown on both sides. Once ready cut the sandwich diagonally into halves, and serve hot with tomato ketch up. Your cucumber sandwich ready!

How to use the chapatti maker: Pre heat the chapatti maker. Light goes off once it is ready. Now place the sandwich on the bottom plate and close the top plate over it. Wait for 10-15 seconds. Lift the top plate and rotate the sandwich 900 and close the top plate over it once again. Wait for 10-15 more seconds. Lift the top plate, and remove the sandwich.

Note: You may use the standard dosa tava instead of sandwich or chapatti maker. Heat the tava on medium flame and place the sandwich on it. Wait till the bottom slice turns golden brown. Turn over cook the other slice in the same way.
