Simple Vegetable Salad (பச்சைக்காய்கறிக் கலவை)


More often than not, we have a sumptuous dinner ready, but are at a loss to make a suitable salad for the spread. We have no time left for preparing the salad dressing, nor do we have the patience for a fancy vegetable salad cutting. A simple salad can always be spiced up match the menu and save your day. Here is how...

Ingredients: (Serves three)
Vegetables – sliced, 1 teacup or 200ml measure* 
Pepper powder –¼ teaspoon (adjust to taste)
Salt – to taste
Chat masala – ½ teaspoon
Lemon juice – juice of quarter lemon

*Cucumber, carrot, onion, tomato and raddish can be used alone or in desired combinations. Capsicum can be added to any combo.
Simple cucumber salad

Method: Wash the vegetables and cut them into thin slices. Arrange the slices on a plate in an appealing presentation. Sprinkle salt, pepper and chat masala over the salad, taking care that the spices are spread uniformly. Squeeze the lime over the salad ensuring that the juice is spread uniformly. Keep the salad in the refrigerator for 30 minutes. Serve chilled.
