Fruit and Vegetable Salad


Healthy diet should include a salad. However, plain salad can get boring over time. Making a rich salad dressing may not always be possible. Here is an interesting salad recipe that can be made quickly.

Ingredients:
Green apple – 1 no, cut into medium cubes
Carrot – small, 1 no, cut into medium cubes
Cucumber – small, 1 no, cut into medium cubes
Cabbage – chopped, 2 tablespoons
Capsicum – cut into small cubes, 1 tablespoon
Olive oil – 1 tablespoon
Pepper powder – ¼ - ½ teaspoon (adjust to taste)
Mustard powder – a pinch
Sugar – ½ teaspoon
Salt – to taste
Lemon juice – ½ teaspoon 
Coriander leaves a few

Fruit and Vegetable Salad
Method: Wash the vegetables and fruit, and cut them as specified. Heat olive oil in a kadai or wok, add the cut salad and toss a few times. Switch off the fire. Add salt, sugar and pepper powder. Mix well. Transfer to a bowl. Add lemon juice and a dash of mustard powder. Mix with a fork. Garnish with coriander leaves. Keep the bowl in the freezer compartment for 10-15 minutes. Serve chilled with chappati and sabzi.
