Potato Sandwich

Potato sandwich is a comfort food (!) and an ideal snack to pack in a picnic basket. This sandwich is filling, easy to make and can be served as a snack, or even as a meal! Those of you, who are staying away from home, would find it ideal for breakfast or dinner. 

Ingredients: (Makes 7 sandwiches)
Bread slices – 14 numbers
Potato – medium sized, 3 no
Onion – chopped finely, 1 no
Oil – 1 tablespoon
Mixed herbs – ½ teaspoon*
Red chili powder – ½ - ¾ teaspoon (adjust to taste)
Turmeric powder – ¼ teaspoon
Salt - to taste
Coriander/cilantro leaves – 1 tablespoon, chopped
Cheese spread – as required

*A combination of rosemary, thyme, oregano and basil

Method: Cook potatoes in pressure cooker for 6 minutes or 7 whistles. Switch off the stove. Once the pressure subsides, remove the potatoes from the cooker and run through cold water. Peel the skin and mash the potatoes. Keep aside.

Heat oil in a kadai or wok, add chopped onion and fry till the onion pieces start to brown. Add the mashed potatoes, turmeric powder, red chili powder, mixed herbs and salt. Mix well into a uniform mass. Add coriander leaves and blend together. Switch off the stove and allow the potato masala (Fig.1) to cool. Divide the masala into seven equal parts.

Smear cheese spread on one side of the bread slices (Fig.2).

Place one part of the potato masala on one slice and spread it evenly (Fig.3).

Place the other slice on top of the potato masala (Fig.4).

 You can use an electric sandwich or chapatti maker to toast the sandwich.

How to use chapatti maker: Pre heat the chapatti maker. Light goes off once it is ready. Now place the sandwich on the bottom plate (Fig.5) and close the top plate over it.

Wait for 10-15 seconds. Lift the top plate and rotate the sandwich 900 and close the top plate over it once again. Wait for 10-15 more seconds. Lift the top plate, and remove the sandwich (Fig.6).

Once ready cut the sandwich diagonally into halves, and serve hot with tomato ketch up!

How to clean the appliance: Once you finish making sandwiches, switch off the electrical supply, unplug the appliance and the let the machine to cool. Later, wipe the cooking surfaces with a damp cloth and allow it to dry. Bring the top and bottom plate together. Store the appliance in a dry place until next use.

Note: You may use the standard dosa tava instead of chapatti maker. Heat the tava on medium flame and place the sandwich on it. Wait till the bottom slice turns golden brown. Turn it over cook the other side in the same way.
